Fresh meat in the sun

This is how the meat market looks in Dominican Republic (country area). It is hung to dry in the blasting heat, without any condiments to preserve freshness. There are just a very few villages that still practice this method. Flies are all over the meat/saussages, it is rather scary :)

It must work or the practitioners of this method would have all died off. It is scary though. A neat photo that I would have taken had I been there.

So did you try any? Steve is probably right...if they were making people sick with this process, they would probably go out of business.
